Kaffir Lime Cordial

This recipe is from the book Speakeasy by Jason Kosmas and Dushan Zaric of the Employees Only bar in NYC.  I highly recommend this book.  I’ve purchased a dozen copies for family, friends and customers!

This cordial is more complex than a traditional lime cordial due to the addition of the lime leaves.  Deliciouos in a Gimlet, Daiquiri or Margarita.

Ingredients

Scale

4 cups fresh squeezed Lime Juice
2.5 cups light Agave Syrup
40 Kaffir Lime Leaves

Instructions

Bring all ingredients to a boil
Reduce heat and simmer 30-35 minutes
Strain into squeeze bottles or jars

Notes

This is a big recipe intended for bars, but you can either scale this down or freeze the extra!
